If you like great-tasting food that is super-quick to make, this recipe is perfect for you. Pasta and Pesto is a really simple dish, but here we take it to a delicious new level. The first trick is to buy fresh filled pasta (available in any major supermarket). There are a ton of flavour options and my favourite, what I’ll be using here, is Spinach and Ricotta.
Ingredients Needed:
- 1 x Pack of Fresh Filled Pasta (flavour as per your taste)
- 1 x Small Pack of Cherry Tomatoes
- Splash of Olive Oil
- Red Pesto
- Pinch of Salt
- Handful of Cheddar Cheese
Method:
- Place your cherry tomatoes in a small roasting tray, splash a dash of olive oil in the tin and roast at 180C for 15 minutes
- In a pan, add some boiling water, season with salt and add in your pasta. Cook for about 2-3 minutes.
- Drain the pasta (preferably using a drainer)
- Add your pasta, the roasted cherry tomatoes and 2 tsp full of pesto to your bowl
- Mix well, quick grate some cheese over each bowl
- And Voila, your super quick and delicious meal is done!
