We all love our bacon buttys at the weekend but have you tried bagel with bacon and eggs? This recipe will change your Saturday morning breakfast forever. Ok, maybe not forever but at least for a few weeks.

I first discovered this wonderful combination when I moved to London and visited one of the many famous Brick Lane bagel shops. If you are ever around those areas go and pay them a visit they are great and cheap.

So if you love, bacon, eggs and bagels give this recipe a go, I can guarantee that you will love it.

Ingredients:

  • 4 Bagels
  • 4 eggs
  • Bacon- 2 rashers per bagel

 Method:

  1. Grill the bacon on both sides until nice and crispy
  2. In the meantime boil the eggs for 5 minutes, this way the yolk will still be runny. If you don’t like runny yolk boil them for 6 minutes. You can also fry the eggs if you wish
  3. When the bacon is done, toast the bagels.
  4. While you are waiting for the bagels to toast, place the bacon in a plate with kitchen roll to drain any excess fat.
  5. Slice the eggs vertically, and then place 2 rashers of bacon on a bagel and the slices of 1 egg.
  6. Eat and enjoy
