We’ve chosen 5 of our favorite zingy puddings for summer evenings, each with something a little different to offer…

1. Brono Loubet’s Fresh Raspberry Mousse with Basil Syrup

Basil may be a powerful flavour but it’s also incredibly versatile. You may be used to enjoying it in a savoury dish, but next to tart raspberries it adds a perfumey sweetness which is utterly scrummy. Taken from The Guardian’s best summer puds list (LINK: http://www.theguardian.com/lifeandstyle/2013/aug/08/20-dessert-recipes-chocolate-nigella), this is a perfectly blanced recipe with an unusual twist. Yum!

2. David Lebovitz’s Pink Grapefruit & Campari Sorbet

It may not sound like a match made in flavor heaven, but grapefruit and campari are sublime and incredibly fresh in combination. The Campari helps to keep your finished sorbet scoopable and the whole recipe (LINK: http://www.davidlebovitz.com/2011/04/grapefruit-campari-sorbet/) calls for no more than 3 ingredients (and an ice cream maker…).

3. Mark Sargeant’s Eton Mess with Passion Fruit

 

An English summertime classic with a zingy twist! In this super sweet recipe (LINK: http://www.bbc.co.uk/food/recipes/etonmess_89422) a splash of kirsch and the replacement of half of the cream with creme fraische or Greek yogurt takes this pudding to a fresher place.

4. Alan Pickett’s Syllabub with Rhubarb Compote

Rhubarb season may be coming to an end but there’s still time to create this tasty little syllabub (LINK: http://www.telegraph.co.uk/foodanddrink/recipes/10711388/Alan-Picketts-syllabub-with-rhubarb-compote-recipe.html). It’s an incredibly easy pub to whip up and, without factoring in chill time (30 minutes in the fridge should do it) you can make it in mere minutes.

5. Alton Brown’s Stone Fruit Pouches

There’s nothing better than cooking over an open fire and, if you’re lucky enough to have the space (or a spot on the beach) a warm fire as the day cools is hard to beat.
