All of the lovely warm weather we’ve been having means that blackberry season is here! If you’ve had enough of winning at bingo no deposit bonus games for today and fancy some fresh air, grab a basket, grab the dog, grab the kids and set out on a hedgerow foraging expedition. If you’re in need of a little inspiration, why not try out these 3 scrumptious, fruity blackberry recipes to get your culinary goddess going! (And not a crumble in sight!)
1. Blackberry Fool from The Hedgerow Cook
Scrumptious, refreshing and ever so easy. This deceptively simple pud is perfect for warm evenings in late summer.
Ingredients
- 400 g blackberries
- 125 g caster sugar
- 300 ml double cream
- Lemon juice
- Vanilla extract
- 250 g Greek yogurt
How to
- Save yourself a handful of blackberries for decoration, then throw the remaining fruits in a pan with the sugar and a tbsp of water. Gradually bring the mixture up to the boil and let it simmer until it gets nice and gooey as the berries release their juices. Then sieve the fruit to remove the pips, add the juice from half of your lemon and leave the whole lot to cool.
- Whip up the double cream and vanilla extract together until the cream is thick enough to make peaks when you lift your whisk. Next, fold in two thirds of your cooled blackberry puree along with the yogurt. Don’t over-mix. Instead let it all blend loosely together so that you have streaks of blackberry goodness running through the cream and yogurt.
- To finish up, spoon your fool into serving glasses, drizzle the leftover puree on top and decorate with your spare blackberries. If you’re feeling fancy, you could even make a meringue to crumble on top as an extra tasty treat.
2. Blackberry Cobbler Cupcakes from The Cake Blog
Cobbler is an American pud which is becoming rather trendy on British soil at the moment. This fabulous recipe for crumbly blackberry cobbler cupcakes is simply scrummy. Ingredients
- 375 g plain flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 225 g unsalted butter, room temperature
- 350 g sugar
- 3 eggs
- 1 tsp vanilla extract
- zest of 1 orange
- 250 ml whole milk
- 150 g blackberries
3. Blackberry Puff Pastry Tarts at AllRecipes
