
I’m always on the quest to be a little bit healthier and one thing I’ve changed in my diet is to make sure I at least have a few meat-free meals during the week.
As soon as I got into the routine, it became second nature when planning out my weekly meals and popping to the supermarket. As a result, I’m also now saving money on my food shop, lost a bit of weight and discovered new yummy veggies in the process!
This Falafel Wrap recipe is my perfect lazy veggie meal, if such a thing exists.
Ingredients for Falafel Wraps:
- 200g pack of falafels
- 2 peppers
- Small tortillas
- 250g low-fat cottage cheese
- 230g salsa dip
- Splash of olive oil
Method
- Remove the seeds and stalks out of the peppers. Cut them into strips.
- In a baking tray, place the peppers and splash with olive oil. Bake in the oven for 15 minutes at 180C.
- Cook the falafels as per the packet instructions. Heat the tortillas for 45 seconds in the microwave.
- Place the falafel, peppers in a serving dish. Remember to take the salsa and cottage cheese to the table.
- Let everyone make their own tortillas and eat with your hands.
