Sweetcorn season is here, the supermarket shelves are full of the stuff and your friends with allotments won’t stop ringing up to palm it off on you every time you sit down for a relaxing game of no deposit bingo.
Not only is sweetcorn scrummy, it’s also brilliantly nutritious; full of healthy dietary fibre, vitamins and antioxidants – plus, it’s gluten free! But, if you’re already bored of corn on the cob, here are 5 fresh ways to eat this seasonal staple and enjoy all of its scrumptiousness!
1. Jamaican Street Corn from DIVA EATS WORLD
You might be bored of buttery, lovely corn on the cob, but we’ll bet you’ll never tire of this Jamaican twist on the British classic. To make, simply grill your sweetcorn in the usual way – the exciting bit comes later. 2. Butternut Squash & Sweetcorn Tortillas from Allotment 2 Kitchen
Looking for something a bit different to do with your sweetcorn? This is a cracker. Squash, fresh sweetcorn, onion and garlic cooked down in a little olive oil, then grilled in a floury tortilla wrap with a few dollops of blue cheese (or cream cheese if you’re not a blue cheese fan) and some lemon thyme. 4. Masala Corn (or Corn Chaat) from Padhu’s Kitchen
If you’re totally overrun with sweetcorn, why not turn a few cobs into a healthy, tasty snack! Masala corn (also known as corn chaat) is a staple Indian street food, and it takes just a few minutes to whip up a bowl as a snack. Did you know that sweetcorn even makes incredible puddings? We don’t make many desserts from corn in the UK, but the clue’s actually in the name.
